I was proud to represent SustyNYC at the International Hotel, Motel, and Restaurant Show (IHMRS) held at the Javits Center November 10-12. I was on a panel talking about trends in Sustainable food and beverage in New York City hosted by Glenn Hasek of Publisher & Editor of Green Lodging News. Other panelists included Danny Cooper, assistant director of F&B at the InterContinental Barclay Hotel, and Michael Oshman, founder and CEO of the Green Restaurant Association.
The panel was on the convention floor in the “Hospitality Green” section so we were surrounded by vendors with everything from compostable containers to environmentally friendly drain cleaner.
I spoke about the mission of the organization to make it easier and less expensive for NYC restaurants to be sustainable. I gave an overview of the survey we are conducting to find out what sustainable practices restaurants are following and the report we plan to release.
